This idea came from a challenger of mine! And it is going to be a new staple in my meal plan! Simple as can be, fabulous and you can make it in a crockpot! Total Win!
What you need:
- 1 pound of boneless, skinless chicken breasts
- 1 can of Rotel (no salt added)
- 2 tbsp 21 Day Fix Southwest seasoning or Chicken Taco seasoning
What you need to do:
- Toss everything (including the juice from the rotel can) in a crockpot
- Add 1/2 cup of water
- Cover and turn on low
- Cook for 6-8 hours
- Shred chicken
- Use for tacos or a salad! Amazing either way
- Enjoy!
