Splash into Summer - 21 Day Fix Challenge

Busy Moms Finding Balance

Exhausting.... draining... overwhelming... and now it is time to detox, and actually I'm not even talking about the food! I am talking about focusing on balance. I am finding balance between working, finances, coaching, motherhood, being a wife, a daughter, a friend, and on and on - and it can be challenging. I am in no means an expert but this year, starting now I am working on balancing - excuses are stopping at the door and like momma always said, "where there is a will, there is a WAY!"

I am looking for 10 motivated mommas who are looking to balance their lives, while making time for themselves to get healthy this year. 2016 for me, isn't about fitting into an outfit, or getting bikini ready ((that was 2015)) - this year, it is about becoming the healthiest version of myself! Boo-Tay Challenge Group

I think I say this before every challenge group, but I just can't help it - so here it is ;) I AM JUST SO DARN EXCITED FOR THIS GROUP! Okay, now I will explain why lol! So, as I continue my own fitness journey I have been doing a little of this and a little of that - but for this challenge (in preparation for December's launch of Hammer and Chisel) I will be doing the 21 Day Fix Extreme with the Countdown to Competition Meal Plan - and I am hoping you will join me! Nothing like having a little bit of accountability!

My 30 day groups are very successful, on average women lose 10 pounds in 30 days - which is the ideal rate of consistent, and long lasting weight loss!

Caprese Chicken

Caprese salad is a family favorite - and in Autumn's new cookbook - FIXATE - she had a great idea to add it to chicken! Great, fresh summer recipe and really quite simple!


What you need:

  • Raw boneless, skinless chicken breast (as many as you plan on making!)
  • Ground black pepper
  • Extra virgin olive oil
  • 2 tsp pesto sauce (per chicken breast)
  • Fresh Basil Leaves
  • 1 slice of fresh mozzarella (per chicken breast)
  • Tomato slices

 

What you need to do:

  1. Season both sides of the chicken evenly with pepper (I am a garlic lover so I also added a pinch of granulated garlic to the chicken!)
  2. Heat oil in nonstick skillet over medium heat
  3. Add chicken, cook for 3-4 minutes on each side (until no longer pink in the middle)
  4. Top chicken with pesto, mozzarella, and tomato.
  5. Reduce heat to low and cook, covered for 1-2 minutes or until cheese and tomatoes are softened.
  6. Top with fresh basil and enjoy!

21 Day Fix Approved Chicken Fajitas

I'm always looking for a way to spice up my very boring meal plan, and this will be a new staple! Took me about 15 minutes and there are tons of ways to switch this up with different toppings!

What you need:

  • 2-3  chicken breasts, sliced into thin strips
  • 1 green of onions, sliced into thin strips
  • 1 yellow of corn, frozen
  • 1 green of chopped multicolored peppers
  • 1 tbsp extra virgin olive oil
  • 1/2 tsp chili powder
  • 3/4 tsp garlic powder
  • Romaine Hearts

What you need to do:

  1. Heat oil in a frying pan on high
  2. Add chicken, once oil is hot
  3. Top with chili and garlic powder
  4. Once chicken is fully cooked at onions, corn and peppers
  5. Cook on high until veggies are cooked (I like them a little browned)
  6. Cut core off of romaine, and place chicken/fajitas in the lettuce
  7. Optional toppings: Greek yogurt, cheese, fresh salsa, tomatoes
-This recipe makes 2 servings -
each serving equals 1.5 reds, 1 green, 1/2 yellow, and 1 tsp.

Bikini Boot Camp Challenge

I am so excited to announce my first ever Bikini Boot Camp Challenge group starting May 6th! I am beyond thrilled to announce this challenge group - why????

One of my big scary goals was to feel confident in a 2 piece swim suit by my birthday, which is now quickly approaching! And guess what, I'm not there yet!!! So I need this challenge group, just as much as you do! So what better way than to reach this goal together?! Whether you are looking to drop those last 5-10 pounds, tone up or jump start your fitness journey - this group is for you!
 
At the end of this challenge, I am rewarding myself a few new summer outfits and a NEW TWO PIECE SWIM SUIT - and I want to reward one of my challengers as well.. Details will be provided in the challenge group, but one lucky challenger will be awarded a gift card to purchase a new swim suit for their new body!
 
I am keeping this group small because I want to work closely with everyone! Meal planning, recipes, 1:1 accountability, motivation and support and confidence training! I am so thrilled to have the sun and sand season ahead of us, and I am determined to make this the best summer yet!

Week 3 & Results!

All the blood, sweat and tears were all worth it! 6.4 pounds in 21 days is pretty incredible, especially for someone who has been clean eating and working out for several months! It wasn't easy, the eggs especially! But with each passing day it got easier and easier! I actually plan on carrying this meal plan into my next program! So where did I lose the inches?
  • 1/4 inch off each arm
  • 1 inch off my waist
  • 1.5 inches off my abdomen
  • 1.5 inches off my hips
  • 1.2 inch off each thigh
When I look in the mirror, I see the biggest changes in my stomach and my back! I can't believe the definition I can see in my back - I love it!!! Here is a little bit of my last week of this challenge:

21 Day Fix Extreme - Week 2

After a great week 1 - I am very excited to start week 2!!! Continuing the Countdown to Competition diet!

Day 8 - Back to Plyo - First time, I thought I was going to vomit, this time - I felt strong and I did so much better!!! Having a little bit of an issue with all the "reds" which for me is chicken, chicken and more chicken!

Day 9 - Upper Focus Extreme - Every 2 days, I get a break from the competition meal plan and get to switch back to the extreme - hello cheese and fruit and an extra carb!!! YAY!!!

Day 10 - Pilates on Crack! I did so much better this week as opposed to last week - I accredit it to LISTENING to Autumn, listen to what she is telling you - how much your arm should bend, or about band placement - I still have a lot of work to do in the pilates and resistance band department though!

Day 11: Leg DAY - amazing the difference a week makes - feeling strong! Great burn and sweat!

Day 12 - Extreme Cardio and Flex Friday! Switching it up on my flex Friday - seeing a lot of definition in my back and shoulders! Extreme Cardio was hard for me today, I was up for 35 hours. After caring for my kids, then working a 12 hour night shift as a nurse, then taking care of my kids all day again - it was very hard to push play.... I almost backed out, took a nap and called it a day- but I couldn't, I knew my accountability partner and my challenge group was waiting for my accountability post - so I pushed play, and felt as energized as ever!

Day 13 - Dirty 30 and 10 min hardcore abs

I love Dirty 30, because I love moving iron! Added an additional ab workout, which felt amazing - I would say I still have a lot of work to do in that department!

21 Day Fix Extreme - Week 1

I was so excited to start Beachbody's newest program - the 21 Day Fix Extreme!! 2 reasons I was really pumped - one, I love incorporating weights into my workouts and two, I knew I needed to take my nutrition to the next level! I am at my weight that I was when I was 23 years old. But after 2 kids, the weight just didn't look the same, but my weight loss that had been so rapid has started to slow down - and I really had to think, what can I change, what was different - and I had to be honest with myself and realized my nutrition was off - picking carbs off the kids plate, a few too many trips to get frozen yogurt and not drinking enough water... So with the help of my friend, fellow coach and accountability partner - Alisha, we committed to doing this program together... The 21 Day Fix Extreme comes with 2 nutrition plans, the extreme and the countdown to competition - we decided to support each other through the countdown nutrition plan... We knew it wouldn't be easy, we both love carbs, dislike fish and eggs (really meat in general lol), and we love cheese - We meal planned together and planned on keeping each other accountable... but the best part about coaching is that not only do we get to keep each other accountable but we get to bring our challengers in on the fun and help them and coach them through the process! So first thing is first - goals for the next 21 days - my goals are to lose 7 pounds, which might seem like a big goal considering I lost 7 pounds in 8 weeks of Insanity Max:30 - but if I reach my goal it will prove that nutrition is really that important!

Okay - So I had to figure out my calories based on the 21 Day Fix Extreme Calculation.. then I saw which calorie range I fell in to.. I fell in the lowest calorie bracket - The food list for the extreme is a little stricter than the food list for the original 21 Day Fix - so here it is....


Once I saw the list, and how many of each color I could have in the day, I made my meal plan:

Woke up extra early to workout - and look who joined me!

And now for day 1: Plyo fix was so much fun - I must admit, after coming off of Insanity Max:30, it was a slower pace - but you have to remember that adding weights changes everything! Yes, Insanity might have had me squatting longer, but a weight squat is a whole different ball game! I am so proud that my husband, Dan has decided to join my journey! His immediate after thought was "I think I am going to throw up!" I don't think he has ever done a workout like that, because in the past he has used the gym and this is totally different!! He also enjoyed his first shake! I can't wait to see how he does with the program - I think he is enjoying the fact that I am actually cooking and packing his food!!!

Day 1 Food!


Day2: Upper Fix Extreme! Loved this because of all the focus on the triceps and back/shoulders! My legs are still so sore from yesterday, and I thought "oh they will get a break" - WRONG! Autumn found a way to work my legs today too!

Bumped up my weights to 8lbs and 10 lbs - felt amazing!
Day 3: Pilates Extreme - Truth me told, not a pilates fan or a resistance band fan - but this way pretty fun! Great ab workout!!! Today was also my "break" day from the competition meal plan and I would use the extreme meal plan today - what a nice and needed change of pace - I missed my cheese and fruit!

Day 4: I've been saying this forever - "I am going to get up early and workout", but I never do! Well today I did it! Go ME! Leg day - ummm yeah - enough said, right? Love working legs because of two things. One, they are the largest muscle in your body so while working them you burn a ton of calories and working muscle helps increase calorie burn all day long. Two, my inner thighs have always been a problem area of mine - so thanks for the weighted soma squats, Autumn!

Went to the Children's Museum - all the salads were premade - with cheese! When I asked if I could have one without cheese they said NO!!! What?!! Okay, time to improvise!


Day 5: Cardio - ummm, with weights, after leg day - are you sure? I was a sweaty, sweaty mess... Very challenging to add weights to cardio! Loved the challenge, but had to decrease my weights to protect my form

Day 6: Dirty 30 Extreme - Just when you thought you were going to get a break!!! I love Dirty 30 cause it is a great "once over" of your whole body... but this was pretty intense, and left me wondering - Will my legs ever get a break? lol

Day 7 - Used today to prep and plan for a successful week ahead - I plan what time I am going to workout, my meals, and I prep  food to make the week go a little smoother and decrease temptation... you will see Thursday dinner is blank - trying to research something new! If not it will be the same old boring chicken! Yoga before bed and excited to weigh in tomorrow morning!
