And I also know, without a doubt that nutrition is 80% of health and weight loss -- so yeah, it is pretty important! And I also realize it is the hardest part - working out for 30 minutes a day is easy, anyone can give up 2% of their day to workout - but the other 23.5 hours of having to control what is on your plate and what goes into your body, now that is the hard part... A lot of people think this is complicated, expensive and takes a lot of time - WRONG-O!!!

Whey Protein

True Story - I am at my mom's house and my mom gives Aubrey chocolate milk (milk with chocolate syrup) and Aubrey says, "this doesn't taste like healthy chocolate milk!"

2015 Summit Recap!

I honestly didn't know what to expect going into Summit - I signed up for what I needed to pretty blindly, and my anxiety about leaving my girls and traveling shadowed me from doing much research.... But it was fun having each day as a big surprise!

of coaches, Beachbody Challenge Winners and the company as a whole! At Summit, I got a ton of motivation from motivational speakers, and trainings from the top coaches in the company... We also get to be the first to get our hands on new swag, programs and supplements.... And hear about all the new product launches! SO needless to say with all the emotions, trainings, information it was overwhelming!

We were so blessed to all stay together in a giant 'Real World' like house within walking distance from the events in Nashville! It was so amazing, we had trainings all day, then could come back and chat and mastermind and then go out on the town! I loved these girls before this event, but I truly felt a deep connection and bond with them after this!

After opening night and all the product launches, we started with trainings the next day.... I am so grateful for the trainings, they helped motivate me, give me some great ideas, and change my point of view! Being the dork that I am, I took a ton of notes and I can't wait to incorporate what I have learned so I can be a better coach and mentor! Also during these trainings, I got a new spark and excitement about my own personal fitness journey!

We made sure that we had fun together as a team, between hitting the town of Nashville and
the parties that Beachbody actually puts on for successful coaches that meet certain criteria! One party that I qualified for was the Success Club Party - yes, I get paid to change lives and then we celebrated that success at a Stars and Stripes Party with live music, drinks and a bbq!











The highlight of my trip was when my coach surprised me with a photo op with ShaunT! Seriously, she gave up her ticket to me - not only that but she printed out my transformation pic for me to ask him to sign... Who does that? Well let's just say this was one of the nicest thing anyone has ever done for me, hands down! I was so nervous though, this was a bucket list item for me! So when the day arrived, I was so anxious - luckily a fellow coach, Maegan was coming along! She talked to me and helped calm me! I practiced what I would say - but needless to say I became almost speechless... When it was almost our turn the Crew member said I was not able to take the photo up to ShaunT... I was crushed - when I went up to Shaun, and I told him about my transformation and thanked him and I asked him if I could show him my transformation - he agreed! I went on to see Chalene and Sagi! After the other photos, I went up to the Crew member and told her I had permission.... We waited in line again and as they were finishing the photo op I was blessed enough that ShaunT agreed to a few more photos and a signature - he was so gueinue and I could tell he was impressed and proud! Best feeling ever!

On Saturday, our last day of Summit - we started the day with a 6am workout with all the trainers and 25,000 coaches! We shut down 7 blocks of a major street in downtown Nashville! The workout was grueling in the heat! After a day of trainings, we went to LP Field to celebrate Top Coaches, the #1 Coach and the Beachbody Challenge Winner! It was so inspiring to see all the weight loss and success stories, as a successful Beachbody transformation the winners touched my heart! The event ended with celebrating the #1 coach, Melanie Mitro - who just so happens to be my coaches, coach! I have done numerous calls and meetings with Melanie and she is truly such a beautiful person and amazing coach!

And to think, I started this business as a "hobby", just some fun money, and maybe to meet some new
friends...

Little did I know that just over a year later, I would have a business - a real business! Oh, and real genuine friends, like best friends...

We are all different, very different - but we all have characteristics that compliment each other... we have a common ground, and a common blessing - we are working on being the best versions of ourselves while transforming lives... we train and master mind together, raise each other up, travel, strive towards financial freedom, and work on our personal health and wellness goals while paying it forward --- and we get to call this or JOB!!!

I never imagined my life would look like this! I feel truly blessed...

I Wanna Dance with Somebody - Cize Exclusive Test Group!

It is no secret that ShaunT is my favorite trainer - and when I heard he was coming out with a new workout, I was undoubtly thrilled! And then I found out, it was a dance video, at first I was like, "dang it, I don't know how to dance." And then I tried it, and I was right - I can't dance, well maybe not in one 40 minute session - but maybe after 4 weeks I could! And much to my surprise, I had a blast, it was fun and I was dripping in sweat - and I was instantly excited!

I am so excited for this program, which is being released July 16-20th - because it is just in time to take to the beach and dance with my sisters, and hey maybe a few of my cousins will join in!

In this 5 week group we will have one week where I teach you everything you need to know about being successful (clean eating, water intake, meal prep and planning), then for 4 weeks we will rock Cize together!

Clean French Toast

 
I must admit, breakfast is my favorite meal of the day - I could eat breakfast food all day long! I was afraid I was going to have to give up my favorite foods... NEGATIVE! Just needed to figure out how to make it healthier! My girls love this recipe! 

What you need:


  • 1 egg
  • 1 cup milk, or soy milk, or almond milk
  • 1 teaspoon vanilla extract
  • 6 slices clean, whole grain bread
  • Cinnamon, ground

 

What you need to do:

  1. Crack your egg into a large bowl.
  2. Add milk and vanilla.
  3. Mix well with a whisk.
  4. When you dip your bread into the mix, do it quickly. Drop it in, flip it over, and take it out again immediately.You just want to coat the bread. Not soak it.
  5. Using a non-stick pan and a very light coat of olive oil to cook the bread on both sides. Cook till golden brown.
  6. Serve with a bit of honey or maple syrup for dipping.

A moment of painful honesty...

In 7 days, I will be driving with a few fellow coaches to Nashville for a giant event - Beachbody's biggest event of the year, Summit - trainings, parties, motivation, workouts with the trainers, exclusive shopping - you name it... I see all my peers talking about how excited they are, they have a countdown going, they are trying on fancy dresses and packing... but not me...

Honestly, I am terrified...

Going to Nashville sums up all of my greatest fears...

Which include, but aren't limited to - large crowds, meeting new people, meeting people I admire, and the greatest of these fears is leaving my girls...

Sounds silly, right?

Almost 30 years old and I have these fears...

So you might say, "Umm, Erin you don't have to go, just stay home!" And I would, but here is the thing, I did not chose to be a coach or to change lives - it CHOSE ME! I am so internally drawn to go, despite the tears and the anxiety and the fears because this is what I was meant to do... And if you know me personally at all, you know it must be true because I don't leave my kids EVER! So funny, because I am sure as a mother you can relate - some days I can't wait for bedtime, or I just want a meal or shower free of interuptions - but then when the opportunity arises, it feels so weird, almost not right!

I have literally broken down and cried about leaving them - I don't know why, guess I am being selfish... I cried today folding their little laundry, and putting them to bed - I feel like this is crazy, because in reality of how much time I get with them, 6 days is nothing... but I've never left, I am always there - and funny thing is, when I talk to Aubrey about it, she is just like "you will bring me home something, right mom?" - some days I wonder how I raised such a strong, independent girl!

I remember last year, when I was watching all everyone at Summit - I remember thinking "I have to
go there" and when I told my mom I bought a ticket to go, she could hardly believe it. The year has come around so quickly, I almost can not believe it... Kate was only 6 months old at the time...

But don't take this the wrong way, part of me is excited to go - the coach part.. The part that knows that this training is going to change my life, help me change more lives and help me be a better mentor to my team..

Really I am blessed - blessed to have so much to waiting at home for me these 6 days I am gone and blessed to have so much to look forward to while I am there... blessed with the opportunity to change lives, including my own...

Clean Soy Honey Chicken Breasts

I can't help myself, I love Chinese food! And I am admittedly the laziest cook.. This recipe pretty much covers these two areas! The girls loved the chicken, thinking it was sweet and nicknaming it, "sugar chicken"!

  • 2 lbs of boneless skinless chicken breasts
  • 1/3 cup honey
  • 1/3 cup low sodium soy sauce
  • 1 tsp of ground ginger
  • 1 tsp minced garlic
  • 2 tbsp dried minced onions
  • 1/4 cup slived green onions
What you need to do:

  1. Trim the fat off chicken.
  2. In a medium sized bowl, mix honey, soy, ginger, garlic and dried onion.
  3. Foil and spray a 9x13" baking pan with extra virgin olive oil.
  4. Add chicken to pan in a single layer, top evenly with marinate
  5. Cover with plastic wrap and marinate for at least one hour.
  6. Preheat oven to 425 degrees
  7. Bake chicken for 30 minutes. Remove chicken from the oven, turn pieces over, top with sliced green onions, and return to oven and bake for 10-15 more minutes.
  8. Serve and enjoy!
