Mock Chipotle Chicken Rice Bowls

I love Chipotle - but my waistline and new budget don't... I know you can order Chipotle to be fairly
healthy, but it is still salty and I can never seem no to chips and cheese! So to solve this problem, this recipe was born!

What you need:

  • 4 Chicken Breasts
  • 3 Colored Peppers, sliced
  • 1 Large Red Onion, sliced
  • Extra Virgin Olive Oil
  • 1 Jar Salsa
  • 1 can of black beans, drained and rinsed
  • 1 bag of frozen corn
  • 1 cup of shredded mozerrella cheese (optional)
  • Fresh Cilantro
  • Garlic Powder
  • 2 cups of Brown Rice, cooked per package instructions

What you need to do:

  1. Preheat over to 400.
  2. Line a large baking sheet with foil
  3. Place the chicken, peppers, and onions on the baking sheet and drizzle with about 2 tablespoons of oil.
  4. Sprinkle garlic powder to both sides of chicken.
  5. Lightly salt and pepper the peppers and onions, tossing to coat.
  6. Top each of the chicken breasts with salsa
  7. Bake for 25 min.
  8. Rest chicken for 10 minutes. 
  9. Slice chicken into strips
  10. Add a base of brown rice to 4 storage containers. 
  11. Top each with a scoop of black beans, corn, salsa, cheese, cooked onions and peppers, and sliced chicken.
  12. Garnish with fresh cilantro.
  13. Enjoy.
  14. Store leftovers for up to 4 days.

about myself on the yoga mat. I have been combining yoga with personal development on learning about true happiness - how to gain it, how to spread it, how to teach it to my daughters.

I am excited to provide you with a 3 week group on what I have learned on and off the mat. This group will be following the 3 Week Yoga Retreat workout program by Beachbody (ask me how you can gain access to it for free!). I will be teaching you about clean eating, fall crockpot recipes, and tools on how to gain happiness in your daily life.

2015 Summit Recap!

I honestly didn't know what to expect going into Summit - I signed up for what I needed to pretty blindly, and my anxiety about leaving my girls and traveling shadowed me from doing much research.... But it was fun having each day as a big surprise!

of coaches, Beachbody Challenge Winners and the company as a whole! At Summit, I got a ton of motivation from motivational speakers, and trainings from the top coaches in the company... We also get to be the first to get our hands on new swag, programs and supplements.... And hear about all the new product launches! SO needless to say with all the emotions, trainings, information it was overwhelming!

We were so blessed to all stay together in a giant 'Real World' like house within walking distance from the events in Nashville! It was so amazing, we had trainings all day, then could come back and chat and mastermind and then go out on the town! I loved these girls before this event, but I truly felt a deep connection and bond with them after this!

After opening night and all the product launches, we started with trainings the next day.... I am so grateful for the trainings, they helped motivate me, give me some great ideas, and change my point of view! Being the dork that I am, I took a ton of notes and I can't wait to incorporate what I have learned so I can be a better coach and mentor! Also during these trainings, I got a new spark and excitement about my own personal fitness journey!

We made sure that we had fun together as a team, between hitting the town of Nashville and
the parties that Beachbody actually puts on for successful coaches that meet certain criteria! One party that I qualified for was the Success Club Party - yes, I get paid to change lives and then we celebrated that success at a Stars and Stripes Party with live music, drinks and a bbq!











The highlight of my trip was when my coach surprised me with a photo op with ShaunT! Seriously, she gave up her ticket to me - not only that but she printed out my transformation pic for me to ask him to sign... Who does that? Well let's just say this was one of the nicest thing anyone has ever done for me, hands down! I was so nervous though, this was a bucket list item for me! So when the day arrived, I was so anxious - luckily a fellow coach, Maegan was coming along! She talked to me and helped calm me! I practiced what I would say - but needless to say I became almost speechless... When it was almost our turn the Crew member said I was not able to take the photo up to ShaunT... I was crushed - when I went up to Shaun, and I told him about my transformation and thanked him and I asked him if I could show him my transformation - he agreed! I went on to see Chalene and Sagi! After the other photos, I went up to the Crew member and told her I had permission.... We waited in line again and as they were finishing the photo op I was blessed enough that ShaunT agreed to a few more photos and a signature - he was so gueinue and I could tell he was impressed and proud! Best feeling ever!

On Saturday, our last day of Summit - we started the day with a 6am workout with all the trainers and 25,000 coaches! We shut down 7 blocks of a major street in downtown Nashville! The workout was grueling in the heat! After a day of trainings, we went to LP Field to celebrate Top Coaches, the #1 Coach and the Beachbody Challenge Winner! It was so inspiring to see all the weight loss and success stories, as a successful Beachbody transformation the winners touched my heart! The event ended with celebrating the #1 coach, Melanie Mitro - who just so happens to be my coaches, coach! I have done numerous calls and meetings with Melanie and she is truly such a beautiful person and amazing coach!

And to think, I started this business as a "hobby", just some fun money, and maybe to meet some new
friends...

Little did I know that just over a year later, I would have a business - a real business! Oh, and real genuine friends, like best friends...

We are all different, very different - but we all have characteristics that compliment each other... we have a common ground, and a common blessing - we are working on being the best versions of ourselves while transforming lives... we train and master mind together, raise each other up, travel, strive towards financial freedom, and work on our personal health and wellness goals while paying it forward --- and we get to call this or JOB!!!

I never imagined my life would look like this! I feel truly blessed...

My First Super Saturday (well Friday really!)


I was so excited when I had the chance to attend my very first Beachbody event - Super Saturday... This event is held quarterly, but with my work schedule and trying to find someone for the girls - I just haven't gotten to go --- but I wasn't going to miss this one!!

It is hard for me to leave them, I hardly ever do and when I do it is usually just for work... I did for like a minute feel guilty, because unlike my nursing job - this isn't mandatory... but I remembered what my coach has been telling me - "come to the events they are game changers" - I am a coach for a lot of reasons but my number one reason is my girls - I want to inspire them, I want to be home with them more, and I want to be able to provide financially more for them... So I hugged her and whispered, "I promise, this is all for you" and Aubrey in all her wisdom said "Okay, whatever mom - can you just bring me home a present?" (ugh, the next 15 years will be interesting lol)

So I was off, and surprisingly impressed myself driving there!

The event was held at the William Omni Penn Hotel, I walked in and I was instantly in awe.. It was still decorated flawlessly for Christmas...

The ballroom was filled to the rim - 1000 people all to celebrate our Dream Team Coach - Melanie Mitro who was being announced as the number 1 coach in the company... So surreal, I have been on countless calls with Melanie and she is so down to earth, and I don't know - normal when really she is like a Beachbody VIP! Since our Pittsburgh Team is honoring Melanie and our team is so large we were able to get Carl Daikeler (Beachbody CEO) and Autumn Calabrese (21 Day Fix Creator) to attend the event!

It was so motivating to be able to hear our own CEO of this billion dollar company speak before us... So great to hear him talk more about our values, mission for this company and WHY we are really here.  Talking about the success we have made for thousands and thousands of people around the US and Canada and talk about some upcoming events that we are having!! Most excitingly, the Beachbody Success Club Trip for 2016 - A cruise to Jamiaca and Hati!!! (and yes, I am going!!!)

After Carl, Autumn spoke about her newest program launching Feb 2nd - THE 21 DAY FIX EXTREME!!!! And we were able to work out with Autumn live, a workout from her new program! It was so fun and intense - I can't wait to do this program!

After the event, we had a great dinner and lots of laughs - I even had a cocktail (rare, rare event!) I got a little tipsy because we waited an hour for our food!

On Saturday, I opted to skip the Insanity workout in the morning - in an effort to sleep in! I was taking advantage of having no kiddos and a bed to myself haha - The Dream Team hosted a great training event. We got to hear from all the elite coaches from the Dream Team and Melanie Mitro herself!

After the training, Deidra took us to lunch in Market Square - it was fabulous and I def ate way too much lol! We received amazingly generous gifts for being Diamond coaches - a Michael Knorr purse which is stunning (I don't even own a single purse, so it was a great gift) and a beautiful bracelet with Forever Fit's motto!

Learning from the best in the biz!
I learned so much and became so motivated for the new year! I knew my goals but now I knew what I needed to get there! Beachbody has changed my life in so many ways - and I am so blessed to have my coach and other coaches to support me every step of the way, not only with my weight loss and fitness goals but with coaching and being the best coach for not only my challengers but for my coaches... This is the most rewarding experience, between my transformation, my self esteem, my confidence, helping others experience the same, and now working on my financial freedom! Before the event, I bought my first pair of high heels and my first tube of lip stick - I was telling my mom about my dress and everything about the event... My mom said, "this doesn't sound like you at all" - and all I could think was, that is exactly the point, I am not the same person I was a year ago...

Next Super Saturday is April 25th, who's coming with me??? My Team - Inspiring Change is growing quickly and if you have a love a fitness, health and helping people - then we would love to have you on our team! New coach training starts soon!

Clean Chicken & Dumplings

I love comfort food, and I love crock pot meals... only problem is the calories, fat and sodium... this is a great spin on a comfort food favorite - easy, conveint and economical!

What you need:

  • Soup:
    • 4-6 C. Reduced Sodium Chicken Broth
    • 1 1/2 Lbs. Boneless Skinless Chicken Breast
    • 2 C. Peas & Carrots, Frozen
    • 1 Onion, Chopped
    • 2 Celery Stalks, Chopped
    • 2 Garlic Cloves, Minced
    • 1 Tsp. Basil
  • Dumplings:

    • 1 1/2 C. Whole Wheat White Flour
    • 1 1/2 Tsp. Baking Powder
    • 1 1/2 Tsp. Parsley
    • 1/2 Tsp. Garlic Powder
    • 1/8 Tsp. Onion Powder
    • 1/4 C. Light Butter (Room Temperature), Cubed
    • 1/3 C. Fat Free Cheddar, Shredded
    • 2/3 C. Fat Free Milk

What you need to do:

  1. Toss everything for the soup into the crock pot. (how awesomely easy is that!)
  2. Cover and set to cook for 6-8 hours on high or 8-10 hours on low.
  3. Once nearly done, remove the chicken and shred with a fork.
  4. Add the chicken back to the crock pot and cover.
  5. Set the crock pot to high now if you've been cooking this on low.
  6. Combine the flour, baking powder, parsley, garlic powder, onion powder, salt and pepper for the dumplings together in a medium bowl.
  7. Cut in the butter using two forks or your hands until it begins to form a grainy mixture (resembling corn starch.)
  8. Add in the cheddar and milk.
  9. Mix just until a thick dough forms and all lumps are out.
  10. Drop the dough by rounded spoonfuls into the crock pot.
  11. Cover and cook on high for 30-60 minutes.
  12. Enjoy!
