Onion Baby-Baked Potatoes

It is no secret... I love butter - my hardest craving to kick! Every time I try to make a regular baked potato, I tell myself I won't put butter on it "this time" and guess what??? I always to... So I gotta switch it up!  Delicious and simple as can be! You can use red potatoes and cut them as well!

What you need:

  • Baby potatoes (red or multicolored)
  • Extra Virgin Olive Oil (amount depends on how many potatoes you are making, you need just enough for a light coating)
  • Dried Minced Onion
  • Onion Powder
  • Dried Parsley
  • Dash of Garlic Powder

What you need to do:

  1. Preheat oven to 400
  2. Spray glass baking dish
  3. Place washed potatoes in the dish, single layer
  4. Drizzle lightly with EVOO
  5. Sprinkle on onion powder and minced onion
  6. Bake for 40 minutes
  7. Enjoy!

Mashed Red Potatoes!

I love mashed potatoes, especially in the winter - growing up I ate mashed potatoes like most of you did - yellow potatoes, peeled, boiled, butter, milk, salt (and when my dad made them he always added sour cream and cream cheese)... Potatoes are a great, clean side if made well - another reason I love potatoes - perfect for my frugal budget!!! So as I embraced a healthier lifestyle, I knew I had to clean up one of my favorite side dishes... and tah-dah! One pot, no peeling, 30 minutes - right up my alley!



What you need:

  • Bag of red potatoes
  • organic butter
  • fresh chopped chives or freeze dried chives
  • garlic salt

What you need to do:

  1. Wash potatoes
  2. Cube potatoes
  3. Put them in a large pot, fill with water just covering potatoes
  4. Place over high flame, once boiling - turn on medium and cover - cook until potatoes are soft, usually 20-30 minutes
  5. Strain potatoes
  6. Hand mash, add butter (I add 1 tbsp. per 4 potatoes), add in garlic salt and chives to taste
  7. I topped mine with freshly grated Colby Jack Cheese
  8. Serve and Enjoy!
